Food science is the study of the physical,
biological, and chemical makeup of food; and the concepts underlying food
processing.
Food processing is the transformation of raw ingredients, by physical or chemical means into food, or of food into other forms. Food processing combines raw food ingredients to produce marketable food products that can be easily prepared and served by the consumer. The food industry is responsible for production and processing of raw materials into finished products.
The food industry is divided into four parts:
1. Production - which include farming, ranching,
aquaculture, fishing and orchard management. Use technologies like plant and
animal selection, cultivation, growth harvest, slaughter and raw material
handling.
2. Manufacturing - converts raw agricultural
products to more refined or finished products. Requires many unit operation and
processes that are key in food technology.
3. Distribution - Concerns itself with aspects that
are conducive to product sales e.g. storage stability, storage requirements,
product form, weight, bulk and transportation.
